Step preview

  4. Heat with splashguard fitted then scrape bowl - 5 min, 40°C, Stir 1
  5. Heat with splashguard fitted until melted - 5 min, 40°C, Stir 1
  6. Add egg yolk and rum to the Cooking Chef XL Bowl while machine is running
  7. Mix with splashguard fitted - 1 min, Stir 1
  8. Transfer chocolate mixture to medium bowl then set aside
  9. Clean Cooking Chef bowl
  10. Attach the Whisk
  11. Add whipping cream to the Cooking Chef XL Bowl
  12. Mix with splashguard fitted until soft peaks form - 1 min 30 sec, Speed 5
  13. Transfer cream to medium bowl then set aside
  14. Clean Cooking Chef bowl
  15. Attach the Whisk
  16. Add egg white to the Cooking Chef XL Bowl
  17. Mix with splashguard fitted until soft peaks form - 1 min, Speed Max
  18. Add caster sugar to the Cooking Chef XL Bowl while machine is running
  19. Mix with splashguard fitted until soft peaks form - 2 min, Speed Max
  20. Remove the Cooking Chef XL Bowl from the machine
  21. Transfer cream to Cooking Chef XL Bowl
  22. Fold gently until combined
  23. Transfer one third of meringue to chocolate mixture
  24. Fold gently until combined
  25. Transfer the rest of meringue to chocolate mixture
  26. Fold gently until combined
  27. Spoon chocolate mixture into 4 dessert glass
  28. Chill in fridge - 1 hr
  29. Serve
