Step preview

  1. Place the beef slices on a cutting board
  2. Spread the mustard over each slice
  3. Add the ingredients on top
  4. Tuck in the sides of the beef and roll up tightly
  5. Pin the roulades with a wooden skewer and set aside
  6. Add oil into a frying pan
  7. Heat - medium-low heat
  8. Fry the roulades until browned on each side, about 2-3 minutes
  9. Remove the roulades and set aside
  10. Fit the Stir Tool
  11. Add butter into the appliance bowl, fit the splashguard
  12. Heat until melted - 1 minute, 120ºC, speed Stir 1
  13. Then add the ingredients
  14. Cook until softened - 6 minutes, 120ºC, speed Stir 1
  15. Then add the ingredient
  16. Cook until thickened - 2 minutes, 120ºC, speed Stir 1
  17. Then add the ingredient
  18. Cook until fragrant - 2 minutes, 120ºC, speed Stir 1
  19. Remove the Stir Tool
  20. Then add the ingredients
  21. Transfer the roulades into the appliance bowl
  22. Cook until tender - 2 hours, 98ºC, speed Off
  23. Remove the roulades and place into a medium bowl
  24. Strain the stock through a sieve into a heatproof bowl, reserving the liquid
  25. Return the strained stock into the appliance bowl, remove the splashguard
  26. Cook until reduced by one third - 10 minutes, 120ºC, speed Off
  27. Fit the Creaming Beater
  28. Add the ingredients to a small bowl, and mix until combined
  29. Transfer the mixture to the appliance bowl then season to taste
  30. Cook until thickened - 10 minutes, 120ºC, speed Stir 1
  31. Remove the Creaming Beater
  32. Return the roulades to the appliance bowl
  33. Cook until warmed through - 5 minutes, 120ºC, speed Off
  34. Serve the roulades with the gravy
