Step preview

  1. Line a clean baking tray with parchment paper
  2. Attach the Whisk
  3. Add whole milk, sugar and dried yeast to the Cooking Chef XL Bowl
  4. Lift the Cooking Chef head and fit the heat shield
  5. Heat with splashguard fitted - 8 min, 36°C, Speed 1
  6. Transfer milk mixture to jug
  7. Let rest - 15 min
  8. Clean Cooking Chef bowl
  9. Attach the K-Beater
  10. Add caster sugar, ground almonds and icing sugar to the Cooking Chef XL Bowl
  11. Mix with splashguard fitted - 1 min, Speed 1
  12. Then add egg to the Cooking Chef XL Bowl
  13. Mix with splashguard fitted - 1 min, Speed 2
  14. Dust a clean work surface with icing sugar
  15. Transfer mixture to work surface
  16. Knead until mixture comes together
  17. Roll into a log then set aside
  18. Clean Cooking Chef bowl
  19. Attach the K-Beater
  20. Add bread flour, ground cinnamon, ground cloves, salt, caster sugar and egg to the Cooking Chef XL Bowl
  21. Transfer content of jug to Cooking Chef XL Bowl
  22. Mix with splashguard fitted - 5 min, Speed 1
  23. Add butter to the Cooking Chef XL Bowl gradually while machine is running
  24. Mix with splashguard fitted until dough forms - 5 min, Speed 1
  25. Transfer dough to lightly floured surface
  26. Add candied citrus peel, glace cherries and flaked almonds to the lightly floured surface
  27. Knead until combined
  28. Form into a rectangle
  29. Place the marzipan in the middle of the dough
  30. Fold the dough over and gently seal to create a seam
  31. Transfer shaped dough to baking tray
  32. Cover loosely with plastic wrap
  33. Prove until doubled in size - 1 hr 35 min
  34. Pre-heat oven - 180°C
  35. Bake until golden brown - 35 min, 180°C
  36. Remove from oven
  37. Add butter and icing sugar to a clean small bowl
  38. Mix until combined
  39. Brush the stollen with the glaze immediately
  40. Turn out onto cooling rack and let cool
  41. Serve
