Step preview

  1. Line a clean baking tray with parchment paper
  2. Add whole milk to a clean jug
  3. Heat in microwave until lukewarm
  4. Add sugar and dried yeast to the jug
  5. Mix until combined then set aside - 15 min
  6. Attach K Beater
  7. Add ground almonds, caster sugar and icing sugar to the Kenwood Bowl
  8. Mix with splashguard fitted - 1 min, Speed 2
  9. Then add egg to the Kenwood Bowl
  10. Mix with splashguard fitted until mixture comes together - 1 min, Speed 2
  11. Dust a clean work surface with icing sugar
  12. Transfer mixture to work surface
  13. Knead until mixture comes together
  14. Roll into a log
  15. Clean Kenwood Bowl
  16. Attach K Beater
  17. Add bread flour, ground cinnamon, ground cloves, salt, caster sugar and egg to the Kenwood Bowl
  18. Transfer content of jug to Kenwood Bowl
  19. Mix with splashguard fitted - 5 min, Speed 1
  20. Add butter to the Kenwood Bowl gradually while machine is running
  21. Mix with splashguard fitted - 5 min, Speed 1
  22. Transfer content of Kenwood Bowl to lightly floured surface
  23. Add candied citrus peel, glace cherries and flaked almonds to the lightly floured surface
  24. Knead until combined
  25. Shape into a rectangle
  26. Place the marzipan in the middle of the dough
  27. Fold the dough over and gently seal to create a seam
  28. Transfer shaped dough to baking tray
  29. Cover loosely with plastic wrap
  30. Prove until doubled in size - 1 hr 35 min
  31. Pre-heat oven - 180°C
  32. Bake until golden brown - 35 min, 180°C
  33. Remove from oven
  34. Add butter and icing sugar to a clean small bowl
  35. Mix until combined
  36. Brush the stollen with the glaze immediately
  37. Turn out onto cooling rack and let cool
  38. Serve
