Step preview

  1. Line a clean baking tray with parchment paper
  2. Attach Whisk
  3. Add whole milk, sugar and dried yeast to the EasyWarm Bowl
  4. Heat with splashguard fitted - 8 min, 8, Speed 1
  5. Transfer mixture to jug
  6. Set aside - 15 min
  7. Remove the bowl from the machine
  8. Attach K Beater
  9. Add ground almonds, caster sugar and icing sugar to the Kenwood Bowl
  10. Mix - 1 min, Speed 1
  11. Then add egg to the Kenwood Bowl
  12. Mix - 1 min, Speed 2
  13. Dust a clean work surface with icing sugar
  14. Transfer content of Kenwood Bowl to work surface
  15. Knead until mixture comes together
  16. Roll into a log then set aside
  17. Remove the bowl from the machine
  18. Clean EasyWarm Bowl
  19. Attach K Beater
  20. Add bread flour, ground cinnamon, ground cloves, salt, caster sugar and egg to the EasyWarm Bowl
  21. Transfer content of jug to EasyWarm Bowl
  22. Mix with splashguard fitted - 5 min, Speed 1
  23. Add butter to the EasyWarm Bowl gradually while machine is running
  24. Mix with splashguard fitted until dough forms - 5 min, Speed 1
  25. Place dough on lightly floured surface
  26. Top with candied citrus peel, glace cherries and flaked almonds
  27. Knead until combined
  28. Shape into a rectangle
  29. Place the marzipan in the middle of the dough
  30. Fold the dough over and gently seal to create a seam
  31. Place shaped dough on baking tray
  32. Cover loosely with lightly oiled plastic wrap
  33. Prove until doubled - 1 hr 35 min
  34. Pre-heat oven - 180°C
  35. Place the baking tray in the oven
  36. Bake until golden brown - 35 min, 180°C
  37. Remove from oven
  38. Add butter and icing sugar to a clean small bowl
  39. Mix until combined
  40. Brush the glaze over the stollen immediately
  41. Turn out onto cooling rack and let cool
  42. Serve
