Zimtsterne, or German cinnamon stars, are a light, gluten free biscuit and usually sold at the German Christmas markets. They're chewy, crisp, and like an almond macaroon which you can make easily at home.

Step preview

  1. Line a clean baking tray with parchment paper
  2. Attach Whisk
  3. Add egg white to the Kenwood Bowl
  4. Mix with splashguard fitted - 1 min, Speed Max
  5. Then add icing sugar to the Kenwood Bowl
  6. Mix with splashguard fitted - 3 min, Speed 4
  7. Transfer half of the meringue to medium bowl and then set aside
  8. Attach K Beater
  9. Add icing sugar, ground almonds and ground cinnamon to the Kenwood Bowl
  10. Mix with splashguard fitted until dough forms - 2 min, Speed Min
  11. Line a clean work surface with parchment paper
  12. Place dough on work surface
  13. Cover with parchment paper
  14. Roll out until 1 cm thick
  15. Chill in fridge - 30 min
  16. Pre-heat oven - 100°C
  17. Dust a clean work surface with icing sugar
  18. Remove the dough from the fridge and peel off the parchment paper
  19. Place dough on work surface
  20. Use a star shaped cookie cutter to cut out star shapes
  21. Re-roll the leftover dough and repeat until all the dough has been used
  22. Spread the thin layer of meringue from the medium bowl onto each star biscuit
  23. Place biscuits on baking tray
  24. Bake - 40 min, 100°C
  25. Remove from oven and let cool
  26. Serve
