Step preview

  1. Add dried mixed fruit, orange, lemon, rum and coconut oil to a clean large saucepan
  2. Heat until sugar has dissolved then reduce heat - 5 min, medium-low heat
  3. Transfer mixture to large mixing bowl
  4. Let cool - 30 min
  5. Add chia seeds and water to a clean small bowl
  6. Mix until combined then set aside
  7. Grease and line a clean springform tin with parchment paper
  8. Pre-heat oven - 150°C
  9. Attach K Beater
  10. Add ground almonds, baking powder, mixed spice, ground cinnamon, ground cloves, flaked almonds, vanilla extract and all purpose flour to the Kenwood Bowl
  11. Transfer content of large mixing bowl to Kenwood Bowl
  12. Pour content of small bowl into Kenwood Bowl
  13. Mix with splashguard fitted - 2 min, Speed 2
  14. Spoon batter into springform tin
  15. Bake - 2 hr, 150°C
  16. Remove from oven and let cool
  17. Serve
