A traditional British Christmas pudding recipe. The pudding is usually made before Christmas then stored; this allows the flavour to develop over time. During the run up to Christmas the pudding is also 'fed' regularly with a little Brandy. The first step is to soak the dried fruit in sherry or brandy for two hours or overnight so allow extra time for this. The pudding is steamed for six hours, cooled, then stored until re-heating and serving on Christmas Day. To heat on Christmas Day, repeat the steaming process and steam for 2 hours.

Step preview

  1. Add currants, raisins, sultanas, candied citrus peel and Cooking Sherry to a clean large mixing bowl
  2. Stir until combined
  3. Cover with plastic wrap
  4. Soak overnight
  5. Grease a clean pudding bowl
  6. Attach Creaming beater
  7. Add unsalted butter and dark brown sugar to the Kenwood Bowl
  8. Mix with splashguard fitted - 2 min, Speed 2
  9. Then add all purpose flour, egg, blanched almonds, fresh breadcrumbs, orange, lemon and mixed spice to the Kenwood Bowl
  10. Transfer soaked fruit to Kenwood Bowl
  11. Mix with splashguard fitted - 1 min, Speed 2
  12. Transfer mixture to pudding bowl
  13. Cut a circle, 3cm larger than the top of the bowl from a piece of parchment paper
  14. Grease the paper circle with butter and place over the pudding bowl
  15. Secure with a string, then top with two layers of plastic wrap
  16. Place a trivet or saucer into the base of the large saucepan
  17. Transfer pudding bowl to large saucepan
  18. Add water to the large saucepan
  19. Cover with a lid
  20. Simmer and let cool - 6 hr, medium-low heat
  21. Remove the old parchment paper and plastic wrap
  22. Cut a circle, 3cm larger than the top of the bowl from a piece of parchment paper
  23. Grease the paper circle with butter and place over the pudding bowl
  24. Secure with a string, then top with two layers of plastic wrap
  25. Serve
