Step preview

  1. Add bulgur wheat and water to a clean large mixing bowl
  2. Soak - 30 min
  3. Drain
  4. Place on the kitchen towel and squeeze out the excess water
  5. Attach the Food Mincer attachment and fit the Fine screen
  6. Place a large bowl underneath the attachment
  7. Add the soaked bulgur wheat into the Food Mincer attachment
  8. Start the machine on speed 4
  9. Using the pusher, gently push the food down the feed tube
  10. Add walnuts to the Food Mincer attachment
  11. Start the machine on speed 4
  12. Using the pusher, gently push the food down the feed tube into the large bowl
  13. Remove the attachment from the machine
  14. Add vegetable oil, ground cumin, smoked paprika, marjoram, salt, black pepper, lemon and all purpose flour to the large mixing bowl
  15. Mix until dough forms
  16. Chill in fridge until needed
  17. Add oil to a clean medium cast iron skillet
  18. Heat until hot - medium heat
  19. Add onion to the medium cast iron skillet
  20. Sauté until translucent - medium heat
  21. Add potato and carrot to the medium cast iron skillet
  22. Cook until tender - medium heat
  23. Add frozen peas to the medium cast iron skillet
  24. Cook - 2 min, medium heat
  25. Add ground cumin, kosher salt and black pepper to the medium cast iron skillet
  26. Stir until combined
  27. Set aside and let cool
  28. Line a clean baking tray with parchment paper
  29. Remove the dough from the fridge
  30. Attach the Food Mincer attachment and fit the Kebbe Maker
  31. Place a large bowl underneath the attachment
  32. Start the machine on speed 1
  33. Transfer dough to Food Mincer attachment
  34. Using the pusher, gently push the food down the feed tube
  35. Pinch closed one end
  36. Add 1 Tbsp of the cooked vegetable filling into the hole
  37. Form into an oval shape
  38. Gently pinch the ends
  39. Place the kebbe onto the prepared baking tray
  40. Repeat the same with the rest of the dough and filling mixture
  41. Chill in freezer - 10 min
  42. Retrieve the chilled kebbe
  43. Add oil to a clean large saucepan
  44. Heat until hot - high heat
  45. Fry each side until golden brown - high heat
  46. Serve
