I prepared these potato pancakes as an accompaniment to my Christmas menu with lamb meatballs and a vegetable stir fry. I mixed the grated potatoes with parsnips and chives. These components give the fritters a particularly delicious, spicy note. The mixture can be prepped ahead then cook before you want to eat it. Ideal food prep recipe for Christmas. Step preview

  1. Fit the coarse grating disc to the Food Processor attachment
  2. Grate potatoes into the attachment
  3. Transfer the potatoes onto a kitchen towel
  4. Squeeze out as much liquid as possible and add to a large mixing bowl
  5. Reassemble the attachment to the machine
  6. Grate the ingredients into the attachment
  7. Transfer the grated ingredients into the large mixing bowl
  8. Then add the ingredients
  9. Mix until well combined and set aside
  10. Line a plate with paper towel and set aside
  11. Add oil into a frying pan
  12. Heat until hot - medium-high heat
  13. Using a large ice cream scoop, place the batter into the frying pan and press flat
  14. Fry the fritters, about 4-5 minutes on each side, one at a time
  15. Place the fritters on the lined plate
  16. Serve
