Chicken braised in a white wine and cream sauce with root vegetables, mushroom, and asparagus. This recipe uses chicken thighs and drumsticks- browning the skin of the chicken pieces in batches in the cooking chef bowl before cooking them in the sauce. We have served the chicken on the bone, however if you prefer you can remove the meat from the bone at the end of the recipe and return it to the sauce before serving.

  1. Add chicken pieces into a large mixing bowl
  2. Season with salt & pepper then set aside
  3. Add oil into the appliance bowl, fit the splashguard
  4. Heat until hot - 2 minutes, 170ºC, speed Off
  5. Transfer 2 pieces of chicken at a time into the appliance bowl
  6. Cook until browned - 3 minutes, 170ºC, speed Off
  7. Use tongs to turn the chicken over and cook the other side - 3 minutes, 170ºC, speed Off
  8. Transfer the cooked chicken to a plate and set aside
  9. Repeat with the rest of the chicken cooking each side - 3 minutes, 170ºC, speed Off
  10. Leave any remaining oil in the appliance bowl
  11. Fit the Stir Tool & Stir Assist Clip
  12. Add butter into the appliance bowl, fit the splashguard
  13. Heat until melted - 1 minute, 120ºC, speed Stir 1
  14. Then add the ingredients
  15. Cook until softened - 5 minutes, 120ºC, speed Stir 3
  16. Then add the ingredient
  17. Cook until softened - 2 minutes, 120ºC, speed Stir 3
  18. Then add the ingredients
  19. Cook until combined - 2 minutes, 120ºC, speed Stir 1
  20. Then add the ingredient
  21. Cook until deglazed - 3 minutes, 150ºC, speed Stir 1
  22. Then add the ingredients
  23. Cook until thickened - 2 minutes, 105ºC, speed Stir 1
  24. Then add the ingredients
  25. Cook until combined - 30 seconds, 105ºC, speed Stir 1
  26. Transfer the browned chicken into the appliance bowl
  27. Cook - 8 minutes, 110ºC, speed Off
  28. Cook until the liquid has reduced - 6 minutes, 103ºC, speed Off
  29. Then add the ingredient
  30. Cook until softened - 2 minutes, 110ºC, speed Off
  31. Add the ingredients into a small bowl and stir to combine
  32. Transfer the mixture to the appliance bowl
  33. Cook until thickened - 5 minutes, 110ºC, speed Stir 3
  34. Then add the ingredients
  35. Stir until combined - 20 seconds, speed Stir 1
  36. Remove the bay leaf from the bowl
  37. If you prefer, remove the bone from the chicken and add the meat back into the appliance bowl
  38. Serve with rice
