Cassoulet is a French speciality from the Languedoc region, with dried white beans and meat. Originally, it was made with broad beans. The cassoulet takes its name from a glazed terracotta pan called a ‘cassole’. This recipe uses dried beans, remember to soak in water 24 hours before making this recipe.

  9. Remove the lamb with a slotted spoon into the heatproof bowl, cover and set aside
  10. Remove the Stir Tool
  11. Add sausages into the appliance bowl, fit the splashguard
  12. Cook until browned - 2 minutes 30 seconds, 140ºC, speed Off
  13. Use tongs to flip over and cook the other side
  14. Cook until browned - 2 minutes 30 seconds, 140ºC, speed Off
  15. Remove the sausages with a slotted spoon into the heatproof bowl, cover and set aside
  16. Add duck breast, skin side down, into the appliance bowl, fit the splashguard
  17. Cook until browned - 4 minutes, 140ºC, speed Off
  18. Use tongs to flip over and cook the other side
  19. Cook until browned - 4 minutes, 140ºC, speed Off
  20. Remove the duck with a slotted spoon into the heatproof bowl, cover and set aside
  21. Fit the Stir Tool
  22. Add the ingredients into the appliance bowl, fit the splashguard
  23. Cook - 4 minutes, 120ºC, speed Stir 1
  24. Then add the ingredients
  25. Cook - 10 minutes, 105ºC, speed Stir 3
  26. Cook until the beans are tender with a light bite - 30 minutes, 98ºC, speed Stir 3
  27. Use tongs to transfer the vegetables into a large bowl
  28. Return the meat to the appliance bowl
  29. Cook until tender - 1 hour 30 minutes, 98ºC, speed Stir 4
  30. Preheat an oven to 180ºC
  31. Transfer the vegetables and the meat into a casserole dish, add the meats skin side up
  32. Reserve the cooking juices from the meat in the appliance bowl
  33. Add cornflour and a ladleful of cooking juices into a small bowl, mix until well combined
  34. Then add the cornflour mixture to the appliance bowl
  35. Mix - 5 minutes, 98ºC, speed Stir 1
  36. Pour the sauce over the meat and vegetables
  37. Top with the ingredients
  38. Bake - 30minutes, 180°C
  39. Serve
