Lefse is a type of flatbread, made from leftover mashed potatoes with added flour. This mixture is then rolled flat and cooked in a pan on the hob. The result is a thin and soft flatbread that’s more substantial than a crêpe but more delicate and chewier than a flour tortilla. Serve hot with butter and sugar.

Step preview

  1. Add the ingredients into the appliance bowl, fit the splashguard
  2. Cook until soft - 25 minutes, 105ºC, speed Off
  3. Drain potatoes into a colander and discard the water
  4. Fit the Creaming Beater
  5. Return the potatoes to the appliance bowl
  6. Then add the ingredients
  7. Mix until creamy - 1 minute, speed Min
  8. Remove the bowl from the machine and chill in the fridge - 1 hour
  9. Retrieve the potatoes from the fridge
  10. Add flour to the appliance bowl
  11. Mix until combined - 1 minute, speed Min
  12. Lightly brush a frying pan with oil
  13. Heat - medium-high heat
  14. Take some of the potato mixture, use your hands to roll it into a walnut sized ball
  15. Place the ball onto a heavily floured kitchen towel
  16. Roll out the potato mixture on the floured kitchen towel, about 0.25 cm thick
  17. Carefully place the potato pancake into the hot pan
  18. Cook each side until browned
  19. Once cooked transfer to a plate, then cover with a damp towel whilst you repeat with the remaining mixture
  20. Serve hot
