Blanquette of veal is one of the great classics of French gastronomy. Tender pieces of veal and melting vegetables in a creamy sauce... How can you resist? This traditional stew, which evokes family Sunday meals, is easy to make and doesn't cost much. Serve with basmati rice, mashed potatoes, or some crispy sautéed potatoes. This version is a faster "one-pot" recipe. We also have a more traditional and longer method available.

Step preview

  1. Fit thick slicing disc (5) to direct prep attachment
  2. Fit direct prep attachment to kCook Multi
  3. Add butter and all purpose flour to a clean small bowl
  4. Mix until combined then set aside
  5. Stud the cloves into onion and set aside
  6. Fit stir tool to kCook bowl
  7. Add veal shoulder, garlic clove, water, fresh thyme and bay leaves to the kCook bowl
  8. Add cloves and onion to the kCook bowl
  9. Fit kCook bowl to kCook Multi
  10. Attach lid to kCook bowl
  11. Cook with filler cap removed - 1 hr, 96°C, speed 1
  12. Turn direct prep attachment to position 1
  13. Slice carrot into the kCook bowl with direct prep attachment
  14. Turn direct prep attachment to position 2
  15. Add button mushroom to the kCook bowl
  16. Cook with filler cap removed - 30 min, 96°C, speed 1
  17. Then add whipping cream - 48%, salt and black pepper to the kCook bowl
  18. Transfer flour mixture to kCook bowl
  19. Cook with filler cap removed - 10 min, 98°C, speed 4
  20. Serve
