Fried chicken is a beloved street food in South Korea, known for its blistered, crispy coating and sticky sweet sauce with varying spice levels, from mild to super-hot. Also known as ‘candied chicken’ due to the sweetness of the glaze, Korean fried chicken has become incredibly popular in recent years and can be found all over the world. This recipe substitutes whole wings for juicy chicken thighs, made more tender with a short brining stage that keeps the chicken moist once shallow fried. The syrupy sauce is packed with spice and goes perfectly alongside a cold beer – just make sure you have napkins at the ready!

  6. Gradually add the chicken pieces into the dry ingredients, tossing to coat
  7. Line a plate with paper towel and set aside
  8. Add oil into the appliance bowl, fit the splashguard
  9. Heat until hot - 1 minute, 180ºC, speed Off
  10. Gradually add the chicken pieces into the appliance bowl, 4 pieces at a time
  11. Cook until browned - 4 minutes, 180ºC, speed Off
  12. Using tongs, carefully flip the chicken over
  13. Cook until cooked through - 4 minutes, 180ºC, speed Off
  14. Transfer the chicken to the lined plate
  15. Repeat the process with the remaining pieces - 4 minutes, 180ºC, speed Off
  16. Clean the appliance bowl and fit the Stir Tool
  17. Add the ingredients into the appliance bowl, fit the splashguard
  18. Cook until thickened - 5 minutes, 105ºC, speed Stir 1
  19. Remove the bowl from the machine
  20. Then add the cooked chicken and stir gently to combine
  21. Top with the ingredients
  22. Serve
