These Apple Crumble Cookies are a brilliant combination of cinnamon, stewed apples, cookie, and a crumble topping. The result is a crisp cookie base with a soft apple filled centre, and then topped with crunchy buttery crumble mix. These can be eaten as snacks or why not try serving them warm with some custard as a dessert.

Step preview

  1. Grease a clean muffin pan
  2. Attach the Stir Tool
  3. Add green apple, ground cinnamon, light brown sugar and lemon juice to the Cooking Chef XL Bowl
  4. Lift the Cooking Chef head and fit the heat shield
  5. Cook with splashguard fitted - 15 min, 100°C, Stir 2
  6. Transfer apples to small bowl then set aside
  7. Clean Cooking Chef bowl
  8. Attach the Creaming Beater
  9. Add butter and caster sugar to the Cooking Chef XL Bowl
  10. Mix with splashguard fitted - 2 min, Speed 4
  11. Then add egg to the Cooking Chef XL Bowl
  12. Mix with splashguard fitted - 1 min, Speed 1
  13. Then add all purpose flour and vanilla extract to the Cooking Chef XL Bowl
  14. Mix with splashguard fitted - 1 min, Speed Min
  15. Remove the dough from the bowl
  16. Wrap with plastic wrap
  17. Chill in fridge - 30 min
  18. Add butter, caster sugar, demerara sugar and all purpose flour to the Cooking Chef XL Bowl
  19. Attach the K-Beater
  20. Mix until combined then set aside - 5 min, Speed Min
  21. Pre-heat oven - 180°C
  22. Remove the dough from the fridge
  23. Place dough on lightly floured surface
  24. Roll out until 3mm thick
  25. Cut into rounds
  26. Transfer shaped dough to muffin pan
  27. Add filling to dough
  28. Sprinkle 1 Tbsp of crumble mix over the apple filling
  29. Bake - 20 min, 180°C
  30. Remove from oven and let cool
  31. Serve
