Step preview

  1. Attach the Dough Tool
  2. Add italian 00 flour and egg to the Cooking Chef XL Bowl
  3. Lift the Cooking Chef head and fit the heat shield
  4. Mix with splashguard fitted until mixture comes together - 5 min, Speed 1
  5. Transfer dough to lightly floured surface
  6. Knead until smooth
  7. Wrap with plastic wrap then set aside - 15 min
  8. Attach the Pasta Roller attachment
  9. Adjust the setting to 0
  10. Sprinkle some flour between the rollers
  11. Retrieve the dough
  12. Cut in half
  13. Flatten until 1 cm thick
  14. Dust the dough with a little flour
  15. Start on speed 1
  16. Transfer dough to Pasta Roller attachment
  17. Pass the dough through the rollers
  18. Repeat passing the dough through the rollers, adjusting the setting down each time until you reach setting 3
  19. Repeat this process with the other half of the dough
  20. Remove the attachment from the machine
  21. Fit the Spaghetti Pasta Cutter attachment to the machine
  22. Trim the rolled pasta sheets to around 25 cm in length
  23. Start on speed 1
  24. Transfer dough to Pasta Cutter attachment
  25. Pass the dough through the Spaghetti Pasta Cutter attachment
  26. Collect the strands of cut pasta, sprinkle with some flour and set aside in piles on the worktop
  27. Remove the attachment from the machine
  28. Clean Cooking Chef bowl
  29. Attach the Stir Tool
  30. Add butter to the Cooking Chef XL Bowl
  31. Heat with splashguard fitted until melted - 2 min, 110°C, Speed OFF
  32. Then add curry powder and salt to the Cooking Chef XL Bowl
  33. Cook with splashguard fitted - 2 min, 98°C, Stir 2
  34. Then add fresh basil leaves to the Cooking Chef XL Bowl
  35. Mix with splashguard fitted - 20 sec, Speed Min
  36. Transfer butter to heatproof bowl then set aside
  37. Clean Cooking Chef bowl
  38. Attach the Stir Tool
  39. Add olive oil to the Cooking Chef XL Bowl
  40. Heat with splashguard fitted - 2 min, 110°C, Speed OFF
  41. Then add garlic clove and chili flakes to the Cooking Chef XL Bowl
  42. Cook with splashguard fitted - 5 min, 110°C, Stir 2
  43. Then add tomato paste, canned tomatoes, white wine, water, dried basil, dried oregano, salt and black pepper to the Cooking Chef XL Bowl
  44. Cook with splashguard fitted - 5 min, 110°C, Stir 2
  45. Cook with splashguard fitted - 10 min, 102°C, Stir 2
  46. Pre-heat grill - high heat
  47. Place lobster tail on a clean cutting board
  48. Using kitchen shears or a very sharp knife, cut lobster tails right down the centre
  49. Brush with olive oil, salt and black pepper
  50. Place the halved lobster tails, flesh side down, onto the grill pan
  51. Grill - 5 min
  52. Turn over and brush the lobster tails with the curry butter
  53. Grill - 5 min
  54. Remove from oven then set aside
  55. Add water to a clean large saucepan
  56. Heat until hot - high heat
  57. Add pasta to large saucepan
  58. Cook until boiling - high heat
  59. Add salt to the large saucepan
  60. Cook until al dente - 3 min, medium-high heat
  61. Drain pasta into colander
  62. Remove the lobster from the shells and dice into bite size pieces
  63. Add the diced cooked lobster and the cooked pasta into the Cooking Chef XL Bowl
  64. Use tongs to toss the lobster and pasta through the sauce
  65. Add a little of the reserved cooking water from the drained pasta, if needed
  66. Divide pasta between 2 large serving bowls
  67. Garnish with mozzarella cheese and fresh parsley
  68. Top with the lobster shells
  69. Serve
