The Zemetkueche is a brioche in which holes are created to be filled with cream, sugar and cinnamon. A mixture of sugar and cinnamon is then sprinkled over the surface before it is baked. A delicately flavoured crust forms on the brioche during baking and the cream which has seeped into the crumb gives it an irresistible extra soft texture. Step preview

  1. Pre-heat oven - 40°C
  2. Grease and flour a clean pie dish
  3. Fit midi blade to kCook bowl
  4. Add milk, butter and active dried yeast to the kCook bowl
  5. Fit kCook bowl to kCook Multi
  6. Attach lid to kCook bowl
  7. Heat - 3 min, 37°C, speed 4
  8. Then add ground cinnamon, all purpose flour, sugar, egg and salt to the kCook bowl
  9. Mix with filler cap fitted - 1 min 30 sec, speed 8
  10. Let rest - 5 min
  11. Mix with filler cap fitted - 1 min 30 sec, speed 8
  12. Transfer content of kCook bowl to pie dish
  13. Bake - 40 min, 40°C
  14. Add sugar and ground cinnamon to a clean small bowl
  15. Mix until combined
  16. Get the cake out of the oven
  17. Increase the oven temperature to 180°c
  18. Make several holes over the cake using a teaspoon, 1 or 2 cm in diameter
  19. Add sugar mixture to cake
  20. Spoon crème fraîche into the cake
  21. Then sprinkle the cake with the rest of the cinnamon sugar
  22. Add butter to the cake
  23. Bake - 25 min, 180°C
  24. Serve
