Softies are a cross between a cookie and a cake, they are an easy recipe to bake with children - they would be a tasty way to use up that leftover pumpkin from Halloween pumpkin carving too. Make a pumpkin puree before you begin by blending 150-200 g of steamed or cooked pumpkin with a little water until smooth - any excess puree can be frozen.

Step preview

  1. Attach Creaming beater
  2. Add pumpkin purée, unsalted butter, icing sugar, dark brown sugar, pecans, all purpose flour, baking powder, mixed spice, salt and egg to the EasyWarm Bowl
  3. Mix with splashguard fitted - 10 min, Speed Min
  4. Mix with splashguard fitted - 20 sec, Speed 2
  5. Chill in fridge - 20 min
  6. Pre-heat oven - 150°C
  7. Line a clean baking tray with parchment paper
  8. Retrieve the cookie mixture from the fridge
  9. Scoop mixture onto baking tray evenly
  10. Bake - 12 min, 150°C
  11. Remove from oven and let cool
  12. Clean and attach the Creaming beater
  13. Add icing sugar, maple syrup, milk, ground cinnamon and salt to the Kenwood Bowl
  14. Mix - 30 sec, Speed 2
  15. Place a cooling rack above a large baking tray
  16. Place cookies on cooling rack
  17. Spread a little of the maple glaze on top of each softie
  18. Sprinkle with pecans
  19. Let rest until set - 10 min
  20. Serve
