Buttery tarte tatin is a gooey caramelised upside-down tart with a flaky pastry crust. A perfect dessert baked in the oven and you can use either poached pears or canned pears. For this recipe, it is best to use a solid bottom cake tin to prevent the caramel from leaking out.

Step preview

  1. Attach the Stir Tool
  2. Add caster sugar and water to the Cooking Chef XL Bowl
  3. Lift the Cooking Chef head and fit the heat shield
  4. Mix with splashguard fitted - 1 min, Speed Min
  5. Cook with splashguard fitted - 10 min, 160°C, Speed OFF
  6. Cook - 5 min, 180°C, Speed OFF
  7. Then add butter to the Cooking Chef XL Bowl
  8. Cook with splashguard fitted - 2 min, 180°C, Stir 1
  9. Let cool - 5 min
  10. Pre-heat oven - 200°C
  11. Add puff pastry to a clean lightly floured surface
  12. Roll out until 2 mm thick
  13. Using the 20 cm (8") round tin as a guide, cut out a 20 cm (8") circle and then set aside
  14. Pour caramel into tart tin
  15. Top with Canned pear halves
  16. Then place the pastry circle on top and carefully tuck the pastry into the sides of the tin
  17. Bake - 30 min, 200°C
  18. Remove from oven and let cool
  19. Carefully invert onto a serving plate
  20. Serve
