A budget friendly pasta dish using the blender attachment to make a creamy sauce made with pureed sweetcorn. When cooking for one you could use it to make a batch of meals or refrigerate the remaining sauce for up to five days. The recipe makes enough sauce to accompany approximately 300 g of dried pasta, so you could also make it as a midweek meal for the family. Frozen sweetcorn is often cheaper; however, you could use tinned or fresh sweetcorn if you have it. We've added chilli flakes for a little heat, basil, and parmesan for flavour, however you could use cheddar cheese and dried herbs instead.
