The Manele is a small brioche shaped like a little person. It is an Alsatian speciality enjoyed throughout December, but more traditionally on Saint Nicholas' Day (the 6th of December). User generated recipes have not been tested by Kenwood.

  1. Attach the Dough Tool
  2. Add milk and fresh yeast to the Cooking Chef XL Bowl
  3. Lift the Cooking Chef head and fit the heat shield
  4. Heat with splashguard fitted - 5 min, 37°C, Speed OFF
  5. Then add all purpose flour, egg and sugar to the Cooking Chef XL Bowl
  6. Knead with splashguard fitted - 10 min, Speed 1
  7. Then add butter to the Cooking Chef XL Bowl
  8. Knead with splashguard fitted - 10 min, Speed 1
  9. Remove the Dough Tool
  10. Prove with splashguard fitted - 1 hr, 30°C, Speed OFF
  11. Line a clean baking tray with parchment paper
  12. Transfer content of Cooking Chef XL Bowl to lightly floured surface
  13. Knead
  14. Shape the dough as needed
  15. Transfer shaped dough to baking tray
  16. Cover with kitchen towel
  17. Leave - 45 min
  18. Pre-heat oven - 180°C
  19. Add egg to a clean small bowl
  20. Mix until combined
  21. Brush shaped dough with egg mixture
  22. Bake - 20 min, 180°C
  23. Serve
