A mauricette is a salted bread roll from the French region of Alsace, made from pretzel dough, and used as sandwich bread. After brushing the rolls with egg wash, you can garnish them with various toppings such as sesame seeds, coarse sea salt, cumin seeds, pine nuts, or poppy seeds. An easy recipe that can be frozen. Step preview

  1. Fit midi blade to kCook bowl
  2. Add water, 2% milk and fresh yeast to the kCook bowl
  3. Fit kCook bowl to kCook Multi
  4. Attach lid to kCook bowl with filler cap fitted
  5. Heat with filler cap fitted - 3 min, 30°C, speed 3
  6. Then add all purpose flour, salt, caster sugar, butter and egg to the kCook bowl
  7. Mix with filler cap fitted - 3 min, speed 6
  8. Remove midi blade from kCook bowl
  9. Heat with filler cap fitted - 1 hr, 30°C
  10. Pre-heat oven - 200°C
  11. Transfer content of kCook bowl to lightly floured surface
  12. Knead lightly
  13. Shape into balls
  14. Line a clean baking tray with parchment paper then set aside
  15. Add water, baking soda and salt to a clean large saucepan
  16. Heat until boiling
  17. Dip dough balls into boiling water
  18. Transfer dough balls to baking tray
  19. Add egg and water to a clean small bowl
  20. Mix until combined
  21. Brush dough balls with egg mixture
  22. Bake - 12 min, 200°C
  23. Let cool
  24. Use
