This Aromatic Shredded Duck recipe is a simplified version of the traditional Peking Duck dish. One of the most symbolic dishes of Chinese Cuisine, Peking Duck is a delicacy named after the city where it was invented several hundred years ago (Peking is an older variation of the word Beijing). It’s a dish consisting of several elements: shredded pieces of crispy roast duck, topped with sliced vegetables and hoisin sauce, all rolled in a thin pancake. It is a classic appetiser and a popular choice for a Chinese New Year feast.

  1. Grease and line a clean baking tray with parchment paper
  2. Attach the Stir Tool
  3. Add water, duck fat, cinnamon stick, star anise pod, orange and chinese five spice to the Cooking Chef XL Bowl
  4. Lift the Cooking Chef head and fit the heat shield
  5. Cook with splashguard fitted - 4 min, 110°C, Stir 1
  6. Then add duck leg to the Cooking Chef XL Bowl
  7. Cook with splashguard fitted - 2 hr, 95°C, Speed OFF
  8. Pre-heat oven - 220°C
  9. Transfer meat to baking tray
  10. Bake until crispy - 10 min, 220°C
  11. Remove from oven
  12. Use two forks to shred the meat off the leg bone
  13. Transfer meat to serving plate
  14. Serve
