Step preview

  1. Add dates and water to a clean small bowl
  2. Soak - 10 min
  3. Drain
  4. Pre-heat oven - 180°C
  5. Grease and line a clean square pan with parchment paper
  6. Attach Creaming beater
  7. Add unsalted butter and light muscovado sugar to the Kenwood Bowl
  8. Mix with splashguard fitted - 2 min, Speed 1
  9. Then add egg to the Kenwood Bowl
  10. Mix with splashguard fitted - 30 sec, Speed Min
  11. Then add all purpose flour, baking powder, mixed spice and vanilla extract to the Kenwood Bowl
  12. Mix with splashguard fitted - 1 min, Speed Min
  13. Transfer soaked fruit to Kenwood Bowl
  14. Mix with splashguard fitted - 30 sec, Speed Min
  15. Pour batter into square pan
  16. Bake - 25 min, 180°C
  17. Remove from oven and let cool
  18. Clean Kenwood Bowl
  19. Attach Creaming beater
  20. Add unsalted butter and icing sugar to the Kenwood Bowl
  21. Mix with splashguard fitted - 5 min, Speed 1
  22. Then add caramel sauce to the Kenwood Bowl
  23. Mix with splashguard fitted - 1 min, Speed 1
  24. Transfer mixture to cake
  25. Spread until covered
  26. Drizzle with caramel sauce
  27. Slice into squares
  28. Serve
