Ghraybeh (also called ghorayba or graybeh) is a popular Middle Eastern shortbread with a smooth and buttery texture, and delicate, sweet flavour. They are often made around Ramadan and Eid to serve to guests. They stay fresh for a long period at room temperature. This recipe is incredibly easy to make and only requires a few ingredients.

Step preview

  1. Attach the Creaming Beater
  2. Add butter and icing sugar to the Cooking Chef XL Bowl
  3. Lift the Cooking Chef head and fit the heat shield
  4. Mix with splashguard fitted - 2 min, Speed 4
  5. Then add rose water to the Cooking Chef XL Bowl
  6. Mix with splashguard fitted - 30 sec, Speed Min
  7. Then add all purpose flour to the Cooking Chef XL Bowl
  8. Mix with splashguard fitted - 1 min, Speed Min
  9. Remove the dough from the bowl
  10. Wrap with plastic wrap
  11. Chill in fridge - 1 hr
  12. Pre-heat oven - 150°C
  13. Line a clean baking tray with parchment paper
  14. Remove the chilled dough from the fridge
  15. Divide into pieces
  16. Roll into balls
  17. Transfer dough balls to baking tray
  18. Top with pistachios
  19. Bake until firm - 10 min, 150°C
  20. Remove from oven and let cool
  21. Serve
