Buckwheat galettes are a traditional and very popular savoury crepe recipe from Brittany. Serve topped with ham, cheese and a fried egg, or any topping you like, after folding over no more than 2 inches of the 4 sides of each galette so as to leave the centre visible. Serve immediately.
