Step preview

  1. Place the freezer bowl in the freezer 24 hours in advance
  2. Add whole milk, whipping cream and vanilla extract to a clean saucepan
  3. Heat until just boiling - medium heat
  4. Strain mixture into jug and let cool
  5. Attach Whisk
  6. Add egg yolk and caster sugar to the Kenwood Bowl
  7. Mix with splashguard fitted until mixture comes together then scrape bowl - 2 min, Speed 4
  8. Mix with splashguard fitted until thick - 2 min, Speed 4
  9. Pour milk mixture into Kenwood Bowl carefully while machine is running
  10. Mix with splashguard fitted - 3 min, Speed Min
  11. Pour mixture into saucepan
  12. Heat until thick - medium heat
  13. Add dark chocolate to the saucepan
  14. Mix until combined
  15. Chill in fridge until cold - 1 hr
  16. Attach the Frozen Dessert Maker to the machine
  17. Set the speed to Min
  18. Pour custard into Frozen Dessert Maker attachment
  19. Mix - 30 minutes, speed Min
  20. Spoon half of ice cream into airtight container
  21. Drizzle with cherry puree
  22. Swirl through the ice cream
  23. Spoon the rest of ice cream into airtight container
  24. Drizzle with cherry puree
  25. Swirl through the ice cream and cover with a lid
  26. Freeze overnight
  27. Serve
