Step preview

  1. Fit the Creaming Beater
  2. Add milk, orange and lemon peel into the appliance bowl, fit the splashguard
  3. Heat - 1 minute, 105ºC, speed Stir 2
  4. Place a fine mesh sieve over a jug, strain the milk into the jug and discard the peel
  5. Cover the jug with plastic wrap and set aside
  6. Clean the appliance bowl and fit the Creaming Beater
  7. Add egg yolks and caster sugar into the appliance bowl, fit the splashguard
  8. Mix until pale – 1 minute, speed 1
  9. While the machine is running, slowly pour the milk into the appliance bowl
  10. Mix until combined – 3 minutes, speed 1
  11. Heat – 15 minutes, 85ºC, speed Stir 1
  12. Pour the mixture into a large bowl and cover with plastic wrap
  13. Chill in the fridge until cold – 2 hours
  14. Attach the Frozen Dessert Maker attachment to the machine
  15. Set the speed to Min
  16. Pour the chilled custard mixture into the Frozen Dessert Maker carefully
  17. Mix - 30 minutes, speed Min
  18. Transfer the gelato to an airtight container and cover with a lid
  19. Chill in the freezer overnight or until set
  20. Serve
