Simple and delicious, stracciatella pairs the best quality whole milk and chocolate and is one of Italy’s classic gelato flavours. Dextrose powder helps to create the gloriously dense, smooth texture of traditional gelato, but don’t worry if you can’t find it – simply replace with the same weight of sugar. Remember to place the freezer bowl in the freezer 24 hours in advance.

Step preview

  1. Fit the Creaming Beater
  2. Add the ingredients into the appliance bowl, fit the splashguard
  3. Heat - 1 minute, 60ºC, speed Stir 1
  4. Then add the syrup
  5. Mix – 5 minutes, speed Stir 1
  6. Add the ingredients
  7. Heat until combined and no lumps remain - 2 minutes, 85ºC, speed Stir 1
  8. Cook – 7 minutes, 95ºC, speed Stir 1
  9. Pour the mixture into a large bowl and cover with plastic wrap
  10. Chill in the fridge until cold – 2 hours
  11. Attach the Frozen Dessert Maker attachment to the machine
  12. Set the speed to Min
  13. Pour the chilled gelato mixture into the Frozen Dessert Maker carefully
  14. Mix - 25 minutes, speed Min
  15. Using a spoon, carefully drizzle the melted chocolate in a thin stream into the Frozen Dessert Maker, while the machine is running
  16. Mix – 10 minutes, speed Min
  17. Remove the attachment from the machine
  18. Transfer the mixture into an airtight container
  19. Chill in the freezer overnight or until set
  20. Serve
