Pistachio is one of the most popular flavours of gelato in Italy, and the secret to creating the nutty, slightly floral flavour is using pure pistachio paste, which also gives this delicious frozen dessert it’s vibrant green colour. Dextrose powder helps to create the gloriously dense, smooth texture of traditional gelato, but don’t worry if you can’t find it – simply replace with the same weight of sugar. Remember to place the bowl in the freezer 24 hours in advance.
