Step preview

  1. Pre-heat oven - 200°C
  2. Line a clean baking tray with parchment paper
  3. Add sweet potato, onion, garlic clove, ginger, olive oil and jamaican curry powder to a clean large mixing bowl
  4. Mix until combined
  5. Transfer mixture to baking tray
  6. Roast - 30 min, 200°C
  7. Fit kCook bowl to kCook Multi
  8. Transfer roasted vegetables to kCook bowl
  9. Fit max blade to kCook bowl
  10. Add canned coconut milk and vegetable stock to the kCook bowl
  11. Attach lid to kCook bowl with filler cap fitted
  12. Blend with filler cap fitted - 2 min, speed 12
  13. Cook with filler cap fitted - 5 min, 98°C, speed 3
  14. Serve
