Sweet banana muffins are a great way to use up ripe bananas, we’ve added chocolate chips, but you could add blueberries or chopped nuts to the mixture depending on what you have or what needs using up. To decorate the tops of the muffins, add some dried banana chips, chocolate chips and a sprinkle of demerara sugar to the muffins before baking, or top with some sliced caramelised banana after baking.

Step preview

  1. Pre-heat the oven to 190°C
  2. Line the muffin tin with muffin cases
  3. Fit the K- Beater
  4. Add bananas into the appliance bowl
  5. Mix – 1 minute, speed 1
  6. Then add the ingredients
  7. Mix until combined and then scrape down the sides of the bowl – 1 minute, speed 1
  8. Mix until combined – 30 seconds, speed 1
  9. Divide the mixture evenly between the muffin cases
  10. Sprinkle with banana chips, demerara sugar and a few chocolate chips
  11. Bake – 5 minutes, 190ºC
  12. Reduce the temperature and bake until a skewer inserted comes out clean – 15 minutes, 170ºC
  13. Remove from the oven and let cool in the tin – 5 minutes
  14. Transfer muffins to a cooling rack to cool completely
  15. Serve
