A Filipino style pork recipe made with diced pork shoulder. The diced pork is browned in garlic oil then slowly cooked in a sauce of dark soy, garlic and traditionally a white cane vinegar which gives it acidity. Best served with plain rice and topped with crispy fried garlic slices.

  1. Fit the Stir Tool
  2. Add oil into the appliance bowl, fit the splashguard
  3. Heat – 2 minutes, 110ºC, speed Off
  4. Then add garlic
  5. Cook – 8 minutes, 110ºC, speed Stir 2
  6. Transfer the oil mixture into a small bowl and separate the garlic from the oil
  7. Transfer 3 Tbsp of the garlic infused oil back into the appliance bowl
  8. Heat – 2 minutes, 150ºC, speed Off
  9. Add one third of the pork
  10. Cook – 3 minutes 30 seconds, 150ºC, speed Stir 3
  11. Transfer the cooked pork into a medium bowl and drain some of the liquid
  12. Add another third of the pork into the appliance bowl
  13. Cook – 3 minutes 30 seconds, 150ºC, speed Stir 3
  14. Transfer the cooked pork into the medium bowl and drain some of the liquid
  15. Add the remaining pork into the appliance bowl
  16. Cook – 3 minutes 30 seconds, 150ºC, speed Stir 3
  17. Transfer the cooked pork into the medium bowl and drain some of the liquid
  18. Add a little more garlic oil and onion into the appliance bowl
  19. Cook – 4 minutes, 120ºC, speed Stir 2
  20. Transfer the cooked pieces of pork back into the appliance bowl
  21. Add the next ingredients
  22. Cook – 5 minutes, 105ºC, speed Stir 3
  23. Cook – 1 hour, 100ºC, speed Off
  24. Transfer the pork using a slotted spoon into a medium bowl, set aside and continue cooking
  25. Cook until the liquid is reduced by half – 7 minutes, 130ºC, speed Off
  26. Transfer the pork back into the appliance bowl
  27. Cook – 5 minutes - 105ºC, speed Off
  28. Serve
