Step preview

  1. Add the ingredients into the appliance bowl
  2. Heat - 3 minutes, 37°C, speed off
  3. Leave to rest - 1 min
  4. Mix with a spatula
  5. Add in half the flour in one go, then add the salt
  6. Fit the Dough Tool
  7. Add the rest of the flour little by little while the machine is running and mix - 15 minutes, speed 2
  8. Scrape the sides of the bowl with a spatula
  9. Remove the Dough Tool
  10. Prove - 1 hour 20 min, 30°C, speed off
  11. Transfer the dough on a lightly floured work surface
  12. Knock back the dough but do not over knead it
  13. Generously flour your work surface and put your ball of dough on it
  14. Divide the dough into 2 balls
  15. Flatten them with the palm of your hand to a thickness of about 2 cm
  16. Cover the dough with a cloth and leave to prove - 1 hour
  17. Heat a frying pan to very hot
  18. Transfer one of the two breads to the frying pan
  19. The dough will rise again while cooking
  20. Cook for about 3 minutes per side, depending on how hot the pan is
  21. If necessary, cook each side again several times until it becomes golden
  22. Repeat with the second bread
  23. Serve
