A traditional Christmas recipe in Campania, struffoli is a dome of crisp fried dough balls, drenched in a sweet honey and citrus syrup and topped with a scattering of sugar sprinkles and candied peel. To make this recipe truly authentic, use Neapolitan aniseed liqueur in place of rum.

  1. Fit the Dough Tool
  2. Add the ingredients into the appliance bowl and fit the splashguard
  3. Mix – 1 minute, speed Min
  4. Mix – 9 minutes, speed 1
  5. Shape the dough into a ball and wrap in plastic wrap
  6. Let rest – 1 hour
  7. Place the dough on a lightly floured work surface and divide into 8 equal pieces
  8. Roll each piece into a 2 cm wide log
  9. Cut off small pieces of dough, roll into hazelnut-sized balls and then dust with flour
  10. Line a plate with paper towels
  11. Add oil into a large, heavy-base pot, filling no more than 1/3 full
  12. Heat until the oil reaches 190ºC
  13. Working in batches, fry the dough balls until lightly golden – 3 minutes, medium-high heat
  14. Place the fried dough balls onto the lined plate
  15. Clean the appliance bowl and fit the Stir Tool
  16. Add the ingredients into the appliance bowl and fit the splashguard
  17. Heat until the sugar has dissolved - 5 minutes, 85ºC, speed Stir 2
  18. Remove the Stir Tool
  19. Place the fried dough balls into the appliance bowl and using a spatula, gently coat them in the syrup
  20. Arrange the dough balls in a dome shape on a serving plate
  21. Top with candied peel and sprinkles
  22. Serve
