A traditional Christmas recipe in Campania, struffoli is a dome of crisp fried dough balls, drenched in a sweet honey and citrus syrup and topped with a scattering of sugar sprinkles and candied peel. To make this recipe truly authentic, use Neapolitan aniseed liqueur in place of rum.

  2. Add the ingredients into the warming bowl and fit the splashguard
  3. Mix – 5 minutes, speed 1
  4. Shape the dough into a ball and wrap in plastic wrap
  5. Let rest – 1 hour
  6. Place the dough on a lightly floured work surface and divide into 8 equal pieces
  7. Roll each piece into a 2 cm wide log
  8. Cut off small pieces of dough, roll into hazelnut-sized balls and then dust with flour
  9. Line a plate with paper towels
  10. Add oil into a large, heavy-base pot, filling no more than 1/3 full
  11. Heat until the oil reaches 190ºC
  12. Working in batches, fry the dough balls until lightly golden – 3 minutes, medium-high heat
  13. Transfer the fried dough balls onto the lined plate
  14. Add the ingredients into a small saucepan
  15. Heat until the sugar has dissolved - 5 minutes, medium-high heat
  16. Transfer the syrup in a large mixing bowl
  17. Add the fried dough balls into the large bowl and using a spatula, gently coat them in the syrup
  18. Arrange the dough balls in a dome shape on a serving plate
  19. Top with candied peel and sprinkles
  20. Serve
