Traditional in the north of Italy, close to the French border, pan di spezie is usually baked at Christmas time and uses simple ingredients to create a deliciously rich loaf flavoured with honey, cinnamon, and ginger, but you can use whichever warm spices suit your tastes. The pan di spezie can be kept for up to 5 days in an air-tight container.

  1. Preheat the oven to 180ºC
  2. Grease the loaf tin and line with parchment paper
  3. Fit the Whisk Tool
  4. Add the ingredients into the appliance bowl and fit the splashguard
  5. Mix until pale and light - 2 minutes, speed 4
  6. Then add the ingredients
  7. Mix and then scrape the sides of the bowl with a spatula - 4 minutes, speed 2
  8. Mix until well combined – 4 minutes, speed 2
  9. Add honey into the appliance bowl
  10. Mix – 3 minutes, speed 4
  11. Then add the ingredients
  12. Mix and then scrape the sides of the bowl with a spatula – 1 minute, speed 3
  13. Mix – 1 minute, speed 3
  14. Pour the mixture into the prepared loaf tin, drizzle with honey and sprinkle with sugar
  15. Bake until a skewer inserted comes out clean – 55 minutes, 180ºC
  16. Remove from the oven and let cool
  17. Serve
