Rich and delicious, chocolate is one of Italy’s classic gelato flavours and can be found in every gelateria across the country, always using the best quality chocolate available. Dextrose powder helps to create the gloriously dense, smooth texture of traditional gelato, but don’t worry if you can’t find it – simply replace with the same weight of sugar. Remember to place the freezer bowl in the freezer 24 hours in advance.

- Powdered skim milk
- 40 g

- Caster sugar
- 100 g

- Cocoa powder
- 50 g

- Dextrose
- 60 g

- Whole milk
- 600 g

- Whipping cream
- 150 g

- Glucose syrup
- 60 g

Large mixing bowl
Step preview
- Fit the Creaming Beater
- Add the ingredients into the appliance bowl, fit the splashguard
- Heat - 1 minute, 60ºC, speed Stir 1
- Add the next ingredient
- Mix – 5 minutes, speed Stir 1
- Add the following ingredients
- Heat until combined and no lumps remain - 2 minutes, 85ºC, speed Stir 1
- Cook - 7 minutes, 95ºC, speed Stir 1
- Pour the mixture through a fine sieve into a large bowl and cover with plastic wrap
- Place in the fridge until chilled – 2 hours
- Attach the Frozen Dessert Maker attachment to the machine
- Set the speed to Min
- Pour the chilled mixture into the Frozen Dessert Maker carefully
- Mix - 30 minutes, speed Min
- Remove the attachment from the machine
- Pour the mixture into an airtight container
- Chill in the freezer overnight or until set
- Serve
