Rich and delicious, chocolate is one of Italy’s classic gelato flavours and can be found in every gelateria across the country, always using the best quality chocolate available. Dextrose powder helps to create the gloriously dense, smooth texture of traditional gelato, but don’t worry if you can’t find it – simply replace with the same weight of sugar. Remember to place the freezer bowl in the freezer 24 hours in advance.

Step preview

  1. Fit the Creaming Beater
  2. Add the ingredients into the appliance bowl, fit the splashguard
  3. Heat - 1 minute, 60ºC, speed Stir 1
  4. Add the next ingredient
  5. Mix – 5 minutes, speed Stir 1
  6. Add the following ingredients
  7. Heat until combined and no lumps remain - 2 minutes, 85ºC, speed Stir 1
  8. Cook - 7 minutes, 95ºC, speed Stir 1
  9. Pour the mixture through a fine sieve into a large bowl and cover with plastic wrap
  10. Place in the fridge until chilled – 2 hours
  11. Attach the Frozen Dessert Maker attachment to the machine
  12. Set the speed to Min
  13. Pour the chilled mixture into the Frozen Dessert Maker carefully
  14. Mix - 30 minutes, speed Min
  15. Remove the attachment from the machine
  16. Pour the mixture into an airtight container
  17. Chill in the freezer overnight or until set
  18. Serve
