This creates a luxuriously velvety ice cream for those who like desserts that sit on the line between sweet and savoury. Remember to place the bowl in the freezer 24 hours in advance.

Step preview

  1. Fit the Stir Tool
  2. Add butter into the appliance bowl, fit the splashguard
  3. Heat – 1 minute, 120ºC, speed off
  4. Cook until browned – 6 minutes, 140ºC, speed Stir 1
  5. Transfer the mixture into a medium bowl and set aside
  6. Clean the appliance bowl and fit the Creaming Beater
  7. Add the ingredients into the appliance bowl
  8. Heat - 2 minutes, 105ºC, speed Stir 1
  9. Pour the mixture into a jug, cover with plastic wrap and set aside
  10. Clean the appliance bowl and fit the Whisk Tool
  11. Add the ingredients into the appliance bowl
  12. While the machine is running, slowly pour the browned butter
  13. Whisk – 3 minutes, speed 4
  14. While machine is running, slowly pour the hot milk mixture
  15. Whisk – 3 minutes, speed 1
  16. Remove the Whisk Tool and fit the Creaming Beater
  17. Heat – 15 minutes, 85ºC, speed Stir 1
  18. Strain the mixture through a fine mesh sieve into a large bowl
  19. Cover with plastic wrap and let cool
  20. Chill in the fridge – 2 hours
  21. Attach the Frozen Dessert Maker attachment to the machine
  22. Set the speed to Min
  23. Pour the chilled custard mixture into the attachment
  24. Mix – 30 minutes, speed Min
  25. Transfer the ice cream into a plastic container
  26. Add salt and swirl through
  27. Cover the plastic container with a lid and freeze overnight or until solid
  28. Serve
