Fun coffee ganache filled chocolates decorated with white chocolate, great for gifting. To create the white chocolate flicks use a spoon in a quick backwards and forwards motion to create thin lines.

Step preview

  1. Fit the Creaming Beater
  2. Add cream into the appliance bowl, fit the splashguard
  3. Heat - 5 minutes, 50ºC, speed Stir 1
  4. Add the next ingredients
  5. Heat and then scrape down the bowl - 3 minutes, 50ºC, speed Stir 1
  6. Heat - 1 minute 30 seconds, 50ºC, speed Stir 1
  7. Transfer the mixture into a piping bag and let cool
  8. Using a spoon, flick the melted white chocolate across the moulds to create thin lines
  9. Clean the appliance bowl and fit the Creaming Beater
  10. Add 360 g of chocolate into the appliance bowl, fit the splashguard
  11. Heat - 10 minutes, 55ºC, speed Stir 3
  12. Then add 180 g of chocolate
  13. Mix - 3 minutes, speed Stir 2
  14. Heat - 2 minutes, 30ºC, speed Stir 2
  15. Coat the mould with a layer of chocolate
  16. Chill in the fridge until set
  17. Pipe a layer of ganache into the mould
  18. Cover with another layer of chocolate
  19. Shake the mould to level the chocolate
  20. Chill in the fridge until solidified – 30 minutes
  21. Serve
