Step preview

  1. Fit the Whisk Tool

  3. Whisk and then scrape the bowl with a spatula - 1 minute, speed 2
  4. Whisk until smooth – 1 minute, speed 2
  5. Chill in the fridge until needed
  6. Line a plate with paper towels
  7. Fill a large heavy-based saucepan with oil until no more than 1/3 full
  8. Heat until the oil reaches 180ºC
  9. Remove the chilled batter from the fridge
  10. Dip the vegetables into the batter
  11. Working in batches, carefully place the vegetables into the hot oil
  12. Fry until crisp and golden – 3 minutes
  13. Using a slotted spoon, remove the fried vegetables from the saucepan and place on the paper towels
  14. Now, make the dipping sauce
  15. Add the ingredients into a small bowl
  16. Stir until combined
  17. Serve
