Step preview

  1. Add 100 g of the pistachios to the Blender attachment
  2. Blend until a paste forms
  3. Remove the attachment from the machine
  4. Attach the Whisk Tool
  5. Add the ingredients into the warming bowl
  6. Heat until melted - 10 minutes, heat setting 6, speed Stir 1
  7. Add content of warming bowl to the pistachio paste and stir until combined
  8. Add the ingredients to the warming bowl
  9. Whisk until creamy - 2 minutes, heat setting 9, speed Max
  10. Add the pistachio-chocolate mixture and the mascarpone into the warming bowl
  11. Whisk until well combined - 1 minute, Speed Max
  12. Add espresso and amaretto to a small bowl and stir to combine
  13. Dip half of the sponge fingers into the espresso mixture and arrange them next to each other into the bottom of the baking dish
  14. Top the biscuit layer with half of the mascarpone cream and spread to level
  15. Top with half of the chopped pistachios
  16. Add a second level of biscuits and mascarpone cream and finish with a layer of chopped pistachios
  17. Cover and chill in the fridge - 12 hours
  18. Serve
