A rich, comforting meal fit for any dinner party or celebration, this pie is packed with beef and onions, and topped with a layer of sharp cheddar which is sure to be a hit at the dinner table. Any leftovers will last for up to 3 days in the fridge, or the pie can be made ahead and frozen before baking – simply defrost in the fridge overnight before baking.

  1. Fit the K-Beater
  2. Add the ingredients into the appliance bowl, fit the splashguard
  3. Mix until the mixture resembles breadcrumbs - 2 minutes, speed 2
  4. Add the next ingredients
  5. Mix until the pastry comes together - 1 minute, speed 1
  6. Wrap the pastry in a plastic wrap and chill in the fridge - 2 hours
  7. Clean the appliance bowl and fit the Stir Tool
  8. Add the ingredients into the appliance bowl
  9. Heat - 1 minute, 120ºC, speed Off
  10. Add the next ingredients and fit the splashguard
  11. Cook - 10 minutes, 120ºC, speed Stir 2
  12. Remove the splashguard
  13. Add the next ingredients
  14. Cook - 5 minutes, 140ºC, speed Stir 2
  15. Add flour
  16. Cook - 3 minutes, 120ºC, speed Stir 1
  17. Add the next ingredients
  18. Cook until thickened - 15 minutes, 105ºC, speed Stir 3
  19. Season to taste
  20. Transfer the filling into a clean bowl and set aside to cool - 1 hour
  21. Place the chilled pastry onto a lightly floured worksurface
  22. Divide into two pieces, one being twice the size of the other
  23. Roll out the large piece of pastry onto a round about 5 mm thick
  24. Line the pie dish with the pastry leaving some overhanging the sides
  25. Spoon cooled beef filling into the pie dish and spread evenly
  26. Top with an even layer of cheese
  27. Roll the smaller piece of pastry into a 5 mm thick round, larger than the top of the pie dish
  28. Brush the rim of the pie with some of the beaten egg yolk, then place the round pastry on top
  29. Trim and crimp the edges to seal, then brush all over with more egg yolk to glaze
  30. Cut the small hole in the top of the pie
  31. Chill uncovered in a fridge - 30 minutes
  32. Preheat the oven - 220ºC
  33. Place the baking tray in the oven
  34. Remove the pie from the fridge and place on the pre-heated baking tray
  35. Bake - 40 minutes, 220ºC
  36. Remove from the oven and allow to rest - 20 minutes
  37. Serve
