Gingerbread crème brûlée is a decadent dessert that combines the rich and creamy texture of classic crème brûlée with the warm and spicy flavours of gingerbread. The dessert is made by infusing the custard base with ginger, cinnamon, nutmeg, and other festive spices. The mixture is then baked in a water bath until it sets, creating a silky smooth and velvety texture. Just before serving, a layer of sugar is sprinkled on top of the custard and caramelised with a kitchen torch to create a crispy and caramelised topping. Step preview

  1. Preheat the oven - 180ºC
  2. Place the ramekins in a clean large roasting dish and set aside
  3. Fit the Creaming Beater
  4. Add the ingredients into the appliance bowl and fit the splashguard
  5. Cook - 10 minutes, 90ºC speed Stir 4
  6. Strain the mixture through a sieve into a jug and set aside
  7. Clean the appliance bowl and fit the Creaming Beater
  8. Add the ingredients into the appliance bowl, fit the splashguard
  9. Mix - 1 minute, speed 4
  10. Slowly pour the hot mixture from the jug into the appliance bowl, while machine is running
  11. Mix - 2 minutes, speed Min
  12. Strain the mixture through a sieve into a jug to remove any lumps
  13. Fill the large roasting dish with three quarters of hot tap water
  14. Pour the mixture from the jug into the ramekins until three quarters full
  15. Cover loosely with foil leaving one corner uncovered
  16. Carefully place into the oven
  17. Bake - 35-40 minutes, 180ºC
  18. Remove the ramekins from the baking dish and transfer them onto a wire rack
  19. Let cool – 20 minutes
  20. Chill in the fridge – 4 hours
  21. Remove from the fridge
  22. Sprinkle 1 teaspoon of caster sugar over the top
  23. Finish with a blowtorch or under a hot grill until golden brown
  24. Serve
