Step preview

  1. Making the sponge:
  2. Preheat the oven - 175ºC
  3. Grease the two rounds tins and line with parchment paper
  4. Fit the K-Beater
  5. Add the ingredients into the appliance bowl
  6. Mix and then scrape the sides of the bowl with a spatula – 3 minutes, speed 4
  7. While the machine is running, gradually add eggs and mix – 2 minutes, speed Min
  8. Then add the next ingredients
  9. Mix – 30 seconds, speed Min
  10. Add the next ingredients
  11. Mix – 1 minute, speed Min
  12. Divide the mixture between the two tins evenly
  13. Bake until a skewer inserted comes out clean – 20-25 minutes, 175ºC
  14. Remove from the oven and let cool
  15. Making the lemon buttercream:
  16. Clean the appliance bowl and fit the K-Beater
  17. Add the ingredients into the appliance bowl, fit the splashguard
  18. Mix and then scrape the sides of the bowl with a spatula - 2 minutes, speed 3
  19. Mix – 2 minutes, speed 1
  20. Making the lemon drizzle:
  21. Add the ingredients into a jug
  22. Mix until the sugar has dissolved and set aside
  23. Assembling the cake:
  24. Trim the cooled sponge with a cake leveller or a bread knife
  25. Place the bottom sponge layer on a cake board
  26. Brush with half of the lemon drizzle syrup and spread with a layer of buttercream
  27. Top with the second sponge layer and brush with the remaining lemon drizzle syrup
  28. Spread a thin layer of buttercream around the top and sides to crumb coat the cake
  29. Chill in the fridge until set – 20-30 minutes
  30. Once set, cover the sides and the top of the cake with the lemon buttercream
  31. Transfer the remaining buttercream into a piping bag fitted with a large open star tip
  32. Pipe rosettes of buttercream around the top of the cake
  33. Decorate with lemon slices and edible flowers (optional)
  34. Serve
