Airy and fluffy flatbread is the ideal side dish! You can serve it at a BBQ or fill it with your favourite things like a grilled panini. Sliced in half you can also pop it in the toaster. When you have some flatbread left or if you want to prepare it a few days ahead, simply put it in the freezer. Cheese and herbs make a great filing, but everything goes well with flatbread, so don’t hold back! You will find a recipe for Herbs & Cheese Flatbread in my app or on my blog.   1. Making the dough:
  2. Add the ingredients into the appliance bowl and stir to combine
  3. Fit the Dough Tool

  5. Knead until a smooth dough formed – 10 minutes, speed 1
  6. Remove the Dough Tool
  7. Shape the dough into a ball and brush with oil
  8. Place the dough back into the appliance bowl, fit the splashguard
  9. Prove – 1 hour, 30ºC, speed off
  10. Grease the baking tray with oil
  11. Place the dough on the tray and shape into a ball
  12. Using your hands, press the dough flat
  13. Cover with a kitchen towel and prove – 30 minutes
  14. Preheat the oven - 220ºC
  15. Add the ingredients into a small bowl and stir to combine
  16. Brush the top of the dough with the egg mixture
  17. Using a dough scraper or a knife, score the top of the dough into diamond shapes
  18. Sprinkle with seeds
  19. Bake – 18-20 minutes, 220ºC
  20. Remove from the oven and cover with a clean tea towel
  21. Let cool inside the oven – 5 minutes
  22. Then transfer the bread onto a cooling rack and let cool completely
  23. Serve
