Step preview

  1. Add the ingredients into the appliance bowl
  2. Heat - 2 minutes, 120ºC, speed off
  3. Add the meat and fit the splashguard
  4. Cook – 1 hour 30 minutes, 98ºC, speed off
  5. Drain the meat, reserving 150 ml of poaching liquid in a jug
  6. Let cool – 10 minutes
  7. Fit the Knife Blade to the Food Processor attachment
  8. Working in four batches, add the meat and splash of the poaching liquid to the attachment
  9. Pulse until roughly chopped – 30 seconds
  10. Transfer the chopped meat into a large bowl and repeat the process until all the meat has been processed
  11. Add the following ingredients and mix to combine with the meat
  12. Transfer the mixture to serving bowls
  13. Refrigerate - 2 hours
  14. Serve
