Traditionally cooked at the table on a small burner, mizutaki is a Japanese hotpot cooked in dashi. The chicken thighs flavour the dashi as they cook and veg is then added to create a meal that is both healthy and full of flavour. A great way to clean out any leftovers in your fridge, any vegetables can be substituted so use whatever you have to prevent waste.

  3. Heat - 2 minutes, 120ºC
  4. Cook - 15 minutes, 100ºC
  5. Transfer cooked chicken into a clean bowl and set aside
  6. Divide cooked noodles between serving bowls
  7. Top with chicken pieces
  8. Add the ingredients into the appliance bowl, attach the lid with filler cap fitted
  9. Cook - 5 minutes, 110ºC
  10. Add cabbage
  11. Cook - 5 minutes, 110ºC
  12. Divide vegetables between bowls with noodles and chicken
  13. Ladle over broth
  14. Top with onions and ponzu
  15. Serve
