Sholeh Zard is a sweetened Persian rice pudding, cooked until soft and flavoured with aromatic cardamom, rosewater, and saffron, which gives this delicate dessert its sunny yellow colour.

Step preview

  1. Combine saffron and 100 g of hot water in a jug, then set aside to steep
  2. Add rice into a large bowl and wash several times with cold water until the water runs clear
  3. Drain the rinsed rice
  4. Fit the Stir Tool and Stir Asist Clip
  5. Add drained rice and the next ingredients into the appliance bowl
  6. Cook until the rice has softened – 35 minutes, 103ºC, speed Stir 4
  7. Add the saffron mixture and the next ingredients
  8. Cook - 30 minutes, 103ºC, speed Stir 3
  9. Add rose water
  10. Mix – 2 minutes, speed Stir 1
  11. Divide the rice mixture between dessert glasses
  12. Cool at room temperature – 30 minutes
  13. Chill in the fridge until thickened – 1 hour
  14. Remove the puddings from the fridge 30 minutes before serving
  15. Decorate with pistachios and cinnamon
  16. Serve
